The Effect of Water-soluble Chitosan on Enhancing Antioxidant Activity of Dioscorea quinqueloba Thunb. Extract

Abstract
In this study, we examined the antioxidant activity of solvent extracts obtained from Dioscorea quinqueloba Thunb. with water-soluble chitosan (WSCs). The total polyphenol compounds of the extracts (distilled water (D.W.), methanol (MeOH), ethanol (EtOH), and ethyl acetate (EtAc)) were 10.16, 10.48, 14.67 and 19.91 mg/g respectively. And also the total flavonoid compounds of the extracts were 7.58, 9.91, 10.58, and 16.02 mg/g respectively. The radical scavenging activity was measured through the DPPH radical scavenging activity are higher in EtOH extract, whereas EtAc extract are higher in the ABTS radical scavenging activity. As WSCs add to Dioscorea quinqueloba Thunb. extracts, The antioxidant activities of DPPH and ABTS radical scavenging activity are higher than those of each extracts. The reducing power and FRAP assay are higher in EtOH extract, and increased than WSCs. As the result, extracts from Dioscorea quinqueloba Thunb. with water-soluble chitosan are going to be used as a nature antioxidant substance for functional foods.
